My Christian friend, also named Jessica, works with prostitutes in our city with a group called Rahab. She has a passion to show them the love and care they rarely receive from anyone. It's really nice to see a Christian doing something so positive, instead of showing judgement and prejudice. She also cares deeply about abolishing human trafficking. Tomorrow she will be at the the HUNTER Walk for Freedom fundraising for Rahab, the group she works with. She asked me to bake something for her fundraiser so I chose one of my favourite cakes.
This is a recipe I made many times for my family as a teenager. The original recipe is from Betty Crocker but I've combined two of their recipes for this and made it a little differently than I used to. For starters I used greek yoghurt instead of sour cream. We made a switch in our house a couple months ago from sour cream to greek yoghurt because it's definetly the healthier option of the two. Plus, I bought a yoghurt maker so I usually have greek yoghurt in our fridge now, ready to use. I also loved the other recipe that was similar added more spice, like nutmeg and clove. I also used walnuts instead of pecans.
2 1/4 cups of all purpose flour (plain flour)
1 /12 cups packed brown sugar
1 cup greek yoghurt
1/4 cup of softened butter
1/4 cup of vegetable oil or shortening
1/2 cup water
2 large eggs
2 teaspoons of cinnamon
3/4 teaspoon grown cloves
1/2 teaspoon ground nutmeg
1 1/4 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon of salt
1/2 cup chopped walnuts
1/2 cup of packed brown sugar
1 teaspoon of cinnamon
1. Heat oven to 350F/180C (Fan forced 160C)
Grease and lightly flour bottom and sides of an angel food cake (tube) pan as pictured, or 2 inch round pans
2. In a large mixing bowl, beat all cake ingredients on low for 30 seconds, scraping bowl constantly with a spatula. Beat on high for 3 minutes, scraping occasionally.
3. Make filling but mixing all 3 ingredients.
4. Pour around 1/8 to 1/4 of batter into bottom of pan then sprinkle a 1/4 of filling around batter as pictured. Repeat two more times with final filling layer covered completely by cake batter so it won't burn.
5. Bake for 50 minutes to an hour, or until toothpick comes out clean.
6. Frost with Browned Butter Frosting or drizzle a simple Glaze
Simple Glaze Recipe
1/4 cup of butter
2 cups of powdered sugar
1/2 teaspoon of vanilla
1 to 2 tablespoons of milk
Mix together ingredients and stir until smooth then drizzle over cake once you have taken it out of tube pan and turned it over.
Of course I tried a piece! Mmmmm! The yoghurt makes it moist and fluffy.
